Baby P is a great helper in the kitchen. He stands on a stool and helps press down on the Aeropress to make my coffee, stirs in the sugar and milk for me, and lets me know that the food in the toaster is “HOT!”. He’s cool. The other day he wasn’t in a hurry to eat breakfast (sometimes he’s signing ‘eat’ as soon as I go into his room), so we made some muffins. I measured everything and he dumped the ingredients into the bowl and ‘helped’ stir.They came out pretty tasty!
Cinnamon Muffins (or ‘muffs’ as we call them here)
recipe adapted from this recipe from food.com
1 1/2 c flour mix
1/2 c sugar
2 t baking powder
1/2 t salt
1 t cinnamon extract
1 egg
1/2 c milk
1/3 c plus 1/4 c melted butter
cinnamon-sugar*
Preheat oven to 400 degrees and grease a muffin tin. Mix flour, sugar, baking powder ad salt together in a bowl. Add egg, milk, cinnamon extract, and 1/3 c butter. Mix together until combined. Spoon into your muffin pan.** Bake for 18-20 minutes. Brush the tops of the muffins with butter, then sprinkle with cinnamon-sugar. Eat warm.
*I assume you keep cinnamon-sugar in your house at all times. If you don’t, please make some to sprinkle on buttered toast. Mix together 1 part cinnamon for every 4 parts sugar in a small jar. Shake to distribute.
**Note: this recipe was supposed to make 12 muffins and I was trying to spread my batter to make 12 muffins. I made 9 small muffins. I think this really should make 6 regular size muffins.
