Pie Crusts!

Making pies is my thing. I love pies, I love making pies, I love eating pies! This year (like most years) I volunteered to make pies. I whipped out four during nap time/before work this week The menu is: pumpkin, coconut lime custard, maple, and pecan.

Sometimes  I buy my crusts, but we’re trying to buy a house so we’re trying to be good about frivolously spending money we might not have to. This year I made all the crusts! The recipe I used is super simple, just dump everything in the food processor in order and chill, then roll out/pat into your pan and you’re done! 

Pie Crust
1 c plus 2 T rice flour mix
1 t xanthan gum
a pinch of salt
1 T sugar
1 stick cold butter, cut into slices
1/4 c cold seltzer (or water)
2 t cider vinegar
In the bowl of your food processor, mix the flour, xanthan gum, and salt and sugar. Add the butter and pulse until crumbly. Mix together the seltzer and vinegar, and pour in and pulse until dough comes together. Divide the dough in half, flatten on floured pieces of wax paper into two disks, sprinkle with more flour, fold up and stick in the fridge until you need it. Alternately you can roll it out and slide the crust into your pie pans and store in the fridge/freezer that way!
