This is the most boring blog ever. Muffins, muffins, muffins! I can’t stop making last week’s cinnamon roll muffins, so today I forced myself to make something else. Blueberries have been on sale this week and Baby P has been eating them, so we had plenty. I mixed up the cinnamon roll muffin batter with some more sugar, tossed in a half pint of blueberries, sprinkled the top with fancy sugar, and voila! Tasty blueberry muffins. These are quick, have a nice little dome on top, and could be done with any berry, probably!
Blueberry Muffins
2 c flour mix
3 tsp baking powder
1/2 t salt
1/3 c sugar
3 T melted butter
1 egg
1 1/4 c milk
1/2 pint (or more) blueberries
Preheat the oven to 400 degrees and grease a muffin tin. Mix the dry ingredients in a large bowl, and the wet ingredients in a smaller bowl. Combine and stir until uniform and not very lumpy. Stir in blueberries. Divide batter between muffin cups, and sprinkle with fancy sugar (or regular sugar if you don’t have fancy). Bake 15 minutes, or until starting to brown around the edges.
