Lemon loaf cake!

Hi! Summer is finally starting to wind down. Finally. This was the hottest summer I can remember. This is a sweet, quick summery cake. First you make the cake, which is a light lemon loaf cake, and then you make a simple glaze and pour it over the hot cake. When the cake cools, the glaze hardens on the top of the cake and it’s such a perfect dessert. My mom made this when we were younger, and I like to think about Baby P growing up eating it too.

Lemon loaf cake

1 c sugar
6 T room temperature butter
1/2 c milk
2 eggs
1 1/2 c gf flour mix
1 t baking powder
1/2 t xanthan gum (leave out if you’re using a flour mix with xanthan gum)
pinch of salt
zest from 1 lemon

Preheat the oven to 350 and grease a loaf pan. Cream the butter and sugar together, then beat in the milk and eggs. Add in the rest of the ingredients and mix until combined. Pour into a greased loaf pan, and bake 40-45 minutes at 350, until a toothpick inserted in the middle comes out clean. Pour glaze over cake.

Lemon Glaze
1/2 c sugar
1/4 c lemon juice

Combine sugar and lemon juice, and heat in either the microwave or stove top. If you really love lemon, double the glaze!
